Chicken Salad

Goes great on a croissant!

Ingredients

  • 2 (10 ounce) cans chicken chunks, drained
  • 1 cup seedless green grapes, halved (or red)
  • 1/2 cup chopped pecans or almonds
  • 1/2 cup chopped celery
  • Mayonnaise
  • Lemon juice

 

Directions

Mix together chicken, grapes, nuts and celery. 

Mix 1/2 - 1 cup mayo with a squirt of lemon juice. Mix until creamy - adding more of either ingredient until it is the consistancy of a light dressing.

Note: You can also roast chicken breasts/thighs. Sprinkle with your favorite seasonings, place in baking dish, add a 1/4 cup water, cover with foil and back 20-30 minutes. 

Another option is to use Rotisserie Chicken.
