Wild Rice Recipe Inspired by North Star Cafe

One of my families favorite restaurants in Columbus is called North Star Cafe. We recently tried their wild rice side dish and decided we needed to try to make it at home because we all loved it. We found a similar recipe on line and then changed a few things and this is what we came up with!

Ingredients

  • 1 cup wild rice, cooked
  • 1/4 cup chopped red onion
  • 1/4 cup dried blueberries
  • 1/4 cup dried cranberries
  • 1 red pepper, chopped
  • 2/3 cup corn
  • 1/3 cup parsley, chopped
  • 1/3 slivered or sliced almonds
  • 1 T. olive oil for sauteing 

Dressing Ingredients:

  • 1 shallot, peeled and chopped
  • 1/4 cup white balsamic vinegar
  • 1/4 cup olive oil
  • 1 T. dijon mustard
  • Salt and pepper to taste

 

Directions

Cook rice according to the directions on the package.

While the rice is cooking, mix dressing ingredients in a bowl and then blend in a blender or food processor.

Once blended set aside.

Saute slivered almonds with olive oil until slightly darker brown color, put in a bowl to cool.

Using the same pan as you used for browning the nuts, saute red pepper and red onion until slightly soft.

Combine all ingredients including cooked rice in a large mixing bowl and blend.

Add dressing and mix thoroughly.

Chill and serve.
