Golden Pork Medallions

A favorite summertime colorful chicken done on the grill.

Ingredients

  • 1 pork tenderloin (or chicken breast)
  • 1 can/bottle of beer
  • 1 packet McCormick’s Mesquite flavoring
  • Sweet onion, round sliced
  • Tomato, round sliced
  • Green pepper, seeded, round sliced (I use red pepper)
  • Swiss cheese slices

Directions

  1. Mix beer and Mesquite flavoring together.
  2. Put pork tenderloin in a bowl, pouring beer/Mesquite over pork.
  3. Marinate overnight or for at least a few hours turning several times.
  4. When ready to grill, cut tenderloin in 1 inch slices.
  5. Throw out marinade.
  6. Pound tenderloin slices until flat and fairly thin.
  7. Lay out tenderloin slices on a cookie sheet.
  8. Clean onion, tomato and green pepper.
  9. Slice in thin round slices.
  10. On each tenderloin, stack onion, tomato and then green pepper.
  11. Grill on medium heat for about 20-25 minutes. DO NOT TURN over.
  12. Place a piece of sliced swiss cheese on top of each piece of chicken.
  13. Cover grill  for about 5 minutes until cheese is melted.
  14. Remove from grill and serve.

I serve with a summer salad and crusty bread.
