Carrot Cake

Ingredients

  • 12 c. oil
  • 2 tsp. baking soda
  • 2 c. sugar
  • 1 tsp. salt
  • 4 eggs
  • 3 c. grated carrots
  • 2 c. flour
  • 1 c. chopped nuts
  • 12 tsp. nutmeg 

Vanilla Philly Frosting

  • 8 oz. Philadelphia Cream Cheese
  • 2 1/2 c. powdered sugar
  • 1 tsp. vanilla
  • 1 T milk
  • dash salt
  • 9 oz. Cool Whip

Directions

Cream oil and sugar, beat eggs and add dry ingredients and carrots, and nuts.  Bake in 2 well greased and floured 9" cake pans.  Bake 350 degrees for 30-45 min. until toothpick comes out clean.

Vanilla Philly Frosting

Beat until smooth and spread on cake
