Chicken Shish Kabob

A family favorite.

Ingredients

  • 6-8 chicken breasts 
  • Sweet onion
  • Mushrooms
  • Peppers: green, red, yellow
  • Zucchini
  • Pineapple

Marinade Ingredients: 

  • ½ c. salad oil
  • 1/4 c. soy sauce
  • 1/4 c. vinegar
  • ½ t. pepper
  • ½ c. chili sauce
  • ½ onion, chopped
  • 1 t. dry mustard (or regular if you don’t have dry)
  • ½ t. liquid smoke

Directions

  1. Mix all marinade ingredients in a saucepan and bring to a boil. Cool.
  2. Cut up chicken breasts into approx 1″ x 1″ pieces.
  3. Marinate chicken overnight.
  4. Cut up all vegetables in 1 inch cubes.
  5. Thread chicken and vegetables on long skewers.
  6. Grill over medium heat for 20-30 minutes, basting and turning often.

When the skewers are done, take the chicken and vegetables off the skewers and serve in a large serving dish.
