Buckeyes

I always have these on hand for the holidays! Or Ohio State games!

Ingredients

  • 1 1⁄2 c. peanut butter (smooth or crunchy)
  • 1 box confectioner sugar (may need a bit more) (3.5 cups)
  • 2 sticks butter (room temperature)

Melt over double boiler:

  • ½ stick paraffin
  • 1 package chocolate chips (12 oz)

 

Directions

Mix well in bowl. (I found that if you refrigerate at this point they are easier to roll into balls but not necessary.)

Roll into small balls and place on a cookie sheet. (You can also put them in the fridge at this point while waiting for the chocolate.)

Dip balls by toothpick into chocolate mixture covering the ball like a buckeye.

Place on wax paper until set up. I store in a large container with parchment paper between the layers. They freeze well. But they don't last for long!
