Slice the loaf down into 1/2 inch slices. This can be done ahead of time, put in a ziplock bag and freeze them. When you
need to whip something fantastic together "on the fly" pull out the slices and pop in microwave for 10 sec to thaw.
On a cookie sheet arrange the bread, spread Boursin cheese on each slice, and
top with a few slices of roasted red pepper and basil, if available. Toast the
crostini in 350 degree oven for 10-12 until warm and melted.
Serve!
