Salmon from Bev

Love it....Love it....love it!!!

Ingredients

  • 1 1/4 pounds center cut salmon fillets, cut into 4 portions
  • 1/4 tsp salt or to taste
  • Freshly ground pepper to taste
  • 1/4 cups reduced fat sour cream
  • 2 tablespoons stone-ground mustard ( I use one each of spicy brown and
  • Dijon)
  • 2 teaspoons lemon juice
  • lemon wedges ( not really needed unless company is coming!)

Directions

Recipe calls for broiler but I bake in tin foil for at least 10 minutes in a foil pocket and then open foil for last 5 - 10 minutes of cooking ( depending on salmon thickness)

Preheat broiler.

Line broiler pan or baking sheet with foil, then coat it with cooking spray.

Place salmon pieces skin down on the prepared pan.

Season with salt/pepper to taste ( I rinse salmon and pat dry first)

Combine sour cream, mustard and lemon juice in small bowl.

Spread evenly over salmon.

Broil salmon 5 inches from heat until it is opaque in the center. Approx. 10-12 minutes.

Serve with lemon wedges.
