Pesto Pasta

I like to make this for a big family or friends meal. I never started with a recipe…just threw things together…and it’s one of my favorites!😜

Ingredients

  • Pasta: Fettuccini, thin spaghetti or pasta of your choice
  • 1 jar basil pesto
  • Vegetables cut into bite size pieces:
    • zucchini
    • carrots
    • mushrooms
    • asparagus
    • red pepper
    • sweet onions
  • Shrimp or chicken breasts, cut up
  • Toasted pine nuts – optional
  • Grated Parmesan cheese
  • Olive Oil

Directions

  1. Cut up all vegetables into bite size pieces
  2. If using chicken, cut into bite size pieces
  3. Toast pine nuts in pan until slightly toasted.
  4. Cook pasta per box instructions.
  5. In large pan, stir fry your vegetables. When done, put in large bowl.
  6. Stir fry shrimp or chicken.
  7. When done, add vegetables to meat in pan on stove.
  8. Add several tablespoons of pesto – add more if needed.
  9. Cook on top of stove for another 10-15 minutes.
  10. Combine pasta and vegetables in large bowl.
  11. Add pine nuts if using.
  12. Sprinkle with parmesan cheese.

Serve with lots of cheesy bread and extra parmesan  cheese.
