Pat’s Lasagna

Our favorite Lasagna

Ingredients

  • 1 # hot sausage – Italian (or not)
  • 1 clove garlic
  • 1 ½ salt
  • 1 T. whole basil
  • 16 oz. tomatoes (or sauce)
  • 12 oz. tomato paste
  • 3 c. creamy cottage cheese
  • ½ c. parmesan cheese
  • 2 T. parsley
  • 1 t. salt
  • ½ t. pepper
  • 2 beaten eggs
  • 10 oz. lasagna noodles (1 box) – Boil as directed on box.
  • 1 pound mozzarella cheese – shredded or sliced

Directions

  1. Brown sausage and pour off grease.
  2. Add garlic, salt, basil, tomatoes and tomato paste.
  3. Simmer for 30 minutes.
  4. While sausage is simmering, cook noodles per box instructions.
  5. Mix in a bowl cottage cheese, parmesan cheese, parsley, salt, pepper and eggs. Put in fridge if needed.
  6. When noodles are done, place half of the noodles in 11 x 17 glass dish, lining dish.
  7. Spoon ½ of the cheese mixture over noodles, ½ mozzarella cheese, ½ meat mixture.
  8. Make a 2nd layer of noodles, cheese mixture and mozzarella.

Bake 375 degrees for 45-60 minutes. Let stand 10 minutes before cutting.

This can be made ahead and frozen. Allow extra baking time if not baked at time of making.
