Green Bean Casserole

Not as easy as Kristen's Green Bean Casserole...

Ingredients

  • 1 large sweet onion – cut into 1 inch wedges
  • 2 T. oil
  • 3 T. packed brown sugar
  • 2 # fresh or frozen green beans trimmed
  • 6 oz sliced mushrooms
  • 2 T. olive oil
  • 1 T. soy sauce
  • 2 tsp balsamic vinegar
  • 6 oz cream cheese softened
  • 2-3 T. milk
  • 2 T. bread crumbs

Directions

  1. Cook onion in oil for 13-25 minutes until tender and browned. Add brown sugar and cook 3-5 minutes until caramelized.
  2. Cook green beans in boiling water for 7-10 minutes until tender. Combine green beans and mushrooms and toss with olive oil, soy sauce and vinegar mixture.
  3. Roast at 375 degrees for 15-20 min.
  4. Mix cream cheese with milk and then mix with green beans. Top with onions and bread crumbs and bake for additional 15-20 minutes.
