Manicotti

Pasta that's basically a sassy fashion statement for your taste buds.

Ingredients

  • 1 box manicotti shells – cooked slightly
  • Spaghetti sauce
  • 1 # ricotta cheese (or cottage cheese)
  • 1/4 # mozzarella cheese, diced
  • 1 egg
  • 1/4 c. grated parmesan cheese
  • ½ t. chopped parsley
  • Salt and pepper to taste

Directions

  1. Mix cheeses, egg, parsley, salt and pepper until well blended. 
  2. Fill shells.
  3. Place two cups spaghetti sauce in large casserole dish.
  4. Arrange filled shells in single layer (allow for expansion of shells).
  5. Cover shells with 2 c. sauce and ½ c. water.
  6. Cover and bake 400 degrees for 35-40 minutes.
  7. Before serving sprinkle with parmesan cheese.
