Bates Avenue Chicken

This is one of my favorite recipes. It is very easy but looks and tastes very elegant.

Ingredients

  • 16 oz. can whole cranberry sauce
  • 8 oz. bottle Russian salad dressing
  • 1 pkg. dry onion soup mix
  • 1/4 t. salt
  • freshly ground black pepper
  • 8 chicken breasts – can cut in half

Directions

  1. In a bowl, combine cranberry sauce, salad dressing, soup mix, salt and pepper to taste.
  2. Arrange chicken in greased 3 qt. baking dish.
  3. Pour sauce over top.
  4. Cover and bake at 325 degrees for 1 hour.
  5. Remove cover, bake 15 minutes more or until brown.
  6. Serve over rice or noodles.
