Francie’s Tomato Casserole

A good summer recipe for all the ripe tomatoes.

Ingredients

  • 2 large purple onions, sliced (I like to use sweet onions)
  • 6 T. butter or margarine
  • 6 oz. package croutons
  • 6 large tomatoes, sliced
  • 1 t. salt
  • ½ t. pepper
  • ½ t. dried basil
  • 12 oz. shredded Monterey-jack cheese

Directions

  1. Preheat oven to 350 degrees.
  2. Combine tomato slices, salt, pepper and basil in a bowl – set aside.
  3. Melt butter in skillet over medium heat.
  4. Saute onions in butter for 5 minutes, or until soft.
  5. Add croutons and saute 3 more minutes.
  6. In a greased 9 x 13 casserole dish, layer ½ the onion mixture, then ½ the tomato mixture, then ½ the cheese.
  7. Repeat layers.

Bake uncovered  at 350 degrees for 35-40 minutes.
