Francie’s Tomato Casserole
A good summer recipe for all the ripe tomatoes.
Ingredients
2 large purple onions, sliced (I like to use sweet onions)
6 T. butter or margarine
6 oz. package croutons
6 large tomatoes, sliced
1 t. salt
½ t. pepper
½ t. dried basil
12 oz. shredded Monterey-jack cheese
Directions
Preheat oven to 350 degrees.
Combine tomato slices, salt, pepper and basil in a bowl – set aside.
Melt butter in skillet over medium heat.
Saute onions in butter for 5 minutes, or until soft.
Add croutons and saute 3 more minutes.
In a greased 9 x 13 casserole dish, layer ½ the onion mixture, then ½ the tomato mixture, then ½ the cheese.
Repeat layers.
Bake uncovered at 350 degrees for 35-40 minutes.
