Grilled Tomatoes with Pesto
An excellent summer dish on the grill. It can be served as an appetizer or as a side dish.
Ingredients
2 medium tomatoes, halved crosswise
1/4 c. pesto sauce
Chopped sweet onion
1/3 c. almond slices, chopped
2 T. parsley
½ c. shredded Monterey Jack cheese
Directions
Using a spoon, hollow out top 1/4 inch of tomato halves.
Top each half with 2 t. pesto sauce chopped onions.
Arrange tomatoes in 2 foil pie pans.
Grill over medium heat. Cover (lid down) and grill 8-10 minutes.
Stir cheese, almonds, parsley together in a bowl.
Sprinkle mix over tomatoes on grill.
Cover (lid down) and grill 5 minutes.
They are done when cheese is melted and lightly brown on top.
