Grilled Tomatoes with Pesto

An excellent summer dish on the grill. It can be served as an appetizer or as a side dish.

Ingredients

  • 2 medium tomatoes, halved crosswise
  • 1/4 c. pesto sauce
  • Chopped sweet onion
  • 1/3 c. almond slices, chopped
  • 2 T. parsley
  • ½ c. shredded Monterey Jack cheese

Directions

  1. Using a spoon, hollow out top 1/4 inch of tomato halves.
  2. Top each half with 2 t. pesto sauce chopped onions.
  3. Arrange tomatoes in 2 foil pie pans.
  4. Grill over medium heat. Cover (lid down) and grill 8-10 minutes.
  5. Stir cheese, almonds, parsley together in a bowl.
  6. Sprinkle mix over tomatoes on grill.
  7. Cover (lid down) and grill 5 minutes.
  8. They are done when cheese is melted and lightly brown on top.
