Zucchini Casserole

Great recipe to use up the over abundance of summer zucchini.

Ingredients

  • 2 medium zucchini, sliced
  • 1 onion, chopped
  • 1- 8 oz. Sour cream
  • 2 cup saltines, crushed
  • 1/4 c. butter, melted

Directions

  1. Boil/cook Zucchini and onion for 5 minutes and drain.
  2. Add salt and pepper to taste.
  3. Mix with sour cream.
  4. Put in greased casserole dish.
  5. Mix saltines with melted butter and top casserole.

Bake at 400 degrees for 25 minutes.
