Ultimate Baked Potato Soup
This is a hearty soup that will keep you warm during the winter months.
Ingredients
3 # potatoes, scrubbed and pierced, baked in oven
1 T. margarine
1 ½ c. finely chopped onion
2 T. Garlic, minced
1 can chicken broth
3 c. lowfat milk
1 t. salt
1/4 t. pepper
Directions
Bake potatoes till tender.
Melt butter in large pan.
Add onions and garlic, cover and cook 10 minutes till soft – not brown.
Add 2/3 of potatoes – peeled and mashed.
Add broth, milk, salt and pepper. Bring to simmer, stirring occasionally.
Cut remaining potatoes in small cubes. Add to soup – stirring till hot.
Garnish with:
Shredded cheese
crumbled bacon
scallions (green onions)
