Ultimate Baked Potato Soup

This is a hearty soup that will keep you warm during the winter months.

Ingredients

  • 3 # potatoes, scrubbed and pierced, baked in oven
  • 1 T. margarine
  • 1 ½ c. finely chopped onion
  • 2 T. Garlic, minced
  • 1 can chicken broth
  • 3 c. lowfat milk
  • 1 t. salt
  • 1/4 t. pepper

Directions

  1. Bake potatoes till tender.
  2. Melt butter in large pan.
  3. Add onions and garlic, cover and cook 10 minutes till soft – not brown.
  4. Add 2/3 of potatoes – peeled and mashed.
  5. Add broth, milk, salt and pepper. Bring to simmer, stirring occasionally.
  6. Cut remaining potatoes in small cubes. Add to soup – stirring till hot.

Garnish with:

  • Shredded cheese
  • crumbled bacon
  • scallions (green onions)
