Beer Chili

We put this chili in a cast iron pot and hang it over a camp fire all day, adding more beer as the day wears on and it gets thicker.

Ingredients

  • 2  slices bacon, cooked and diced (I use the whole pound!)
  • 1 ½ # ground beef
  • 2/3 c. diced onion
  • 2 t. minced garlic
  • 3 T. chili powder (diluted in 3 T. water)
  • 1-16 oz. can tomatoes
  • 1-8 oz. cans tomato sauce
  • 3-16 oz. cans dark red kidney beans, drained (or mix in light beans, garbanzo, or black)
  • 1 can beer
  • Salt

Directions

  1. Brown bacon, ground beef, onion and garlic together in dutch oven.
  2. Pour off any excess drippings.
  3. Add all other ingredients.
  4. Cover and simmer for at least 1 hour to blend well.
  5. Garnish with cheddar cheese and Oyster crackers.

We garnish with: shredded cheese, onions and Fritos. Makes a wonderful fall chili.

You can also make in a crock pot – cooking all day.
