Marmalade Dressing for Everything

A sweet ‘with a kick of heat’ dressing.

Ingredients

  • 1/3 c. Orange Marmalade (or Peach or Apricot jam)
  • 1/3 c. white wine vinegar
  • 1/3 c. canola oil
  • a few drops of bottled red pepper sauce (depending on how hot you want it!)

Directions

Combine and store in the fridge.

Can be used in many different ways:

  • Drizzle dressing over roasted potatoes, sweet potatoes, beets, asparagus, or crisp tender green beans.
  • Cut 12 oz. skinless boneless chicken breast halves into 1 inch pieces. Heat 1 T. canola oil in a large non stick skillet. Add chicken and stir fry for 3-4 minutes until chicken is not longer pink. Stir in dressing. Cook and stir over medium heat.
  • Makes a citrusy salad by combining coleslaw mix or chipped Napa cabbage and minced green onions. Toss with dressing.
  • Spoon the citrus flavored dressing over fresh fruit, ice cream, or sorbet.
