Spring Lettuce with Feta, Strawberries and Sherry Vinaigrette

Light summer salad.

Ingredients

  • 12 c. assorted lettuce greens rinsed
  • 1 c. herb sprigs (chives, mint, etc) cut up
  • 1 cup crumbled feta cheese
  • ½ c. sliced strawberries

Mix and refrigerate.

Sherry Vinaigrette Ingredients: 

  • ¾ c. sherry vinegar
  • 1 clove garlic, chopped
  • 1 shallot, minced
  • 1 T. Dijon mustard
  • ½ t. sugar
  • ½ t. kosher salt
  • ¼ t. pepper
  • ¾ c. canola oil
  • ¾ c. virgin olive oil

Directions

  1. Place all ingredients for vinaigrette (except the oils) in a blender and pulse until combined.
  2. Switch to the lowest speed and slowly pour in the oils, and blend until emulsified.
  3. Store in a jar with tight lid.
  4. Will last 2 weeks in fridge.

Serve salad with vinaigrette on the side all already mixed in.
