Linda’s Potato Salad

Simply the best!

Ingredients

  • 5-6 potatoes, boiled, and cubed
  • 1 sweet onion, chopped
  • 1-2 stalks celery, chopped
  • 5-6 hard boiled eggs, cut up
  • 5-6 slices bacon, crisp and crumbled

Dressing Ingredients: 

  • 1 c. (approx) Miracle whip
  • 1/4 c. sugar (or to taste)
  • 2-4 T vinegar
  • 2  Dry mustard (I use a squirt of real mustard)
  • 1 T. celery seed

Directions

  1. While the potatoes are boiling, cut up onion, celery and hard boiled eggs.
  2. Fry bacon, drain and crumble.
  3. When potatoes are done, cut up to bite size pieces.
  4. In large bowl, mix potatoes, onion, celery, eggs and bacon.

Dressing Directions: 

  1. Mix all ingredients together to taste.
  2. Pour over potatoes and refrigerate.

You may need to make another batch of dressing depending on how many potatoes you used. Make sure everything is moist.
