Pumpkin Muffins with Chocolate Chips

Yummy breakfast muffins.

Ingredients

  • 1 2/3 cup all purpose flour
  • 1 cup white sugar
  • 1 Tbsp pumpkin pie spice mix
  • 1 tsp baking soda
  • ½  tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1 cup plain pumpkin (canned)
  • ½  cup (1 stick) melted butter
  • 1 cup chocolate chips
  • ½  cup slivered almonds or pecans

Directions

  1. Mix dry ingredients together and set aside.
  2. In separate bowl, mix together eggs, pumpkin and butter.
  3. Add in chocolate chips and nuts.
  4. Add mixture to dry ingredients.
  5. Work with rubber spatula just until moistened.

Bake in muffin cups at 350 degrees for 20-25 minutes or until puffed and springy.

Makes 15-16 cupcakes.
