Smoked Gouda-Stuffed Chicken with Apples
Creamy Gouda cheese and sweet apples make these stuffed chicken breasts a winner!
Ingredients
4 boneless, skinless chicken breasts
4 oz. smoked gouda cheese, grated
1 c. apple cider
½ c. chicken broth
2 apples, any variety, peeled, cored, cut into slices
2 T. honey
1 t. minced garlic
1 T. minced fresh rosemary
rosemary sprigs for garnish
Directions
Rinse and prepare chicken
Cut a two inch slit in the sides of each chicken breast.
Stuff each with the grated gouda cheese.
Heat a large nonstick skillet over medium heat until hot. Coat with cooking spray and add the chicken.
Cook about 4 minutes per side or until done.
Remove to a platter and place in a 200 ° oven to keep warm.
Add the cider and broth to the skillet,
Bring to a boil and cook until reduced by half and somewhat syrupy.
Add the apples, garlic and rosemary and cook five minutes longer or until apples just start to get soft.
Place chicken on serving plates and top with the sauce.
