Artichoke Cheesecake

Judy Lamberjack’s sister made this for Carrie & Brian’s wedding reception. I never did get to try any of the good appetizers or food that night!

Ingredients

  • 3 oz. jarred marinated artichoke hearts
  • 3 pkgs 8 oz. cream cheese softened
  • 5 oz. feta cheese, crumbled
  • 1 1/2 t. chopped fresh oregano
  • 1/4 t. garlic powder
  • 3 large eggs
  • 1//4 c. chopped green onions
  • Roma tomatoes, sliced
  • Greek olives, pitted
  • Fresh basil leaves

Directions

  1. Drain and chop artichokes, reserving 2 T. of the marinade.
  2. Beat cream cheese, feta, oregano and garlic powder in a large bowl.
  3. Add eggs, beating until blended. Do not over beat.
  4. Add artichoke hearts, reserved marinade and green onions. Combine well.
  5. Pour mixture into greased spring form pan and cover loosely with foil.
  6. Bake 400 degrees for 35-40 minutes, until center is soft and sides stay firm when gently shaken. Cool.
  7. Cover and chill 2 hours up to 24 hours. When ready to serve, remove from pan and garnish with tomatoes and olives. Serve slightly chilled or at room temperature.
