Banana Bread

A good way to use up those overripe bananas!

Ingredients

  • 2 1/4 C. flour
  • 1 c. sugar
  • 1 t. baking powder
  • 1 t. salt
  • 3 T. salad oil
  • 1 egg
  • 3/4 c. milk
  • 1 c. chopped pecans
  • 1 c. smashed ripe bananas (about 2-3 bananas)

Directions

  1. Mix all ingredients together – adding the bananas last!
  2. Pour into a greased and floured bread pan. (or about 3 small pans)
  3. Bake for 70 minutes at 350 degrees.
  4. Use toothpick or knife to check for doneness. Top will be golden brown.
  5. Cool on rack.
