Carrot Lemon Bread
A nice light bread that I make into mini loaves for the holidays.
Ingredients
1/2 medium size lemon
3 large eggs
1 c. vegetable oil
2 c. carrots, shredded
3 c. flour
1 t. salt
1 t. baking soda
1 t. baking powder
Directions
Grind lemon (peel and pulp) with blender or processor. Set aside.
Beat eggs in mixing bowl. Add oil and sugar. Mix well.
Sift together dry ingredients and add to liquid mixture. Blend lightly.
Pour into 2 greased & floured loaf pans (or 5 small).
Bake at 350 degrees for 45-50 minutes or until knife comes out clean.
