Crab Stuffed Mushrooms

I like to make these with ‘Grilled Tomatoes with Pesto’ for appetizers.

Ingredients

  • Mushrooms – large button or Portabella
  • 1 c. crabmeat, chopped (can used canned)
  • 1/2 c. sour cream
  • 1/2 c. mayonnaise
  • Swiss cheese, grated

Directions

Clean mushrooms and remove stem. Spoon out gills and base of stem. Place on paper towel to dry.

Mix together crabmeat, sour cream and mayonnaise. Add salt and pepper to taste. Spoon into mushroom caps and sprinkle with grated swiss cheese. Grill 20-30 minutes or until cheese is melted.

Serve.
