We had a wonderful black bean salsa for Jennifer and Dan’s reception that was catered by Fine Dining. Of course, they would not give out the recipe and this is the closest that I have come so far.
Ingredients
3/4 c. black beans, drained
1/4 c. chopped cilantro
1 large ripe tomato, seeded and chopped
1 Jalapeno, finely chopped
1/3 c. chopped red onion
1 T. lime juice
1/2 c. sugar to taste
Directions
Mix together and serve with tortilla chips. Can add: 1/2 mango, 1/2 avocado or 1/2 c. corn if desired.
