Steak and Bacon Tournedos

This is a great recipe for the grill.

Ingredients

  • 1- 1 ½ # beef flank steak
  • Instant unseasoned meat tenderizer
  • 10 oz. bacon
  • 1 t. garlic salt
  • ½ t. ground pepper
  • 2 T. parsley
  • 1 ¼ oz. envelope hollandaise sauce mix
  • 1/4 t. tarragon

Directions

  1. Pound flank steak evenly about ½ inch thick.
  2. Apply meat tenderizer according to package directions.
  3. Meanwhile, cook bacon till almost done, but not crisp.
  4. Sprinkle flank steak with garlic salt and pepper.
  5. Score (not very deep cut in meat but not all the way through) steak diagonally, making diamond-shaped cuts.
  6. Place bacon strips lengthwise on flank steak. Sprinkle with parsley. Roll up as for jelly roll, starting at narrow end.
  7. Skewer with toothpicks at 1 inch intervals.
  8. Cut into 8 – 1 inch slices with a serrated knife.
  9. Grill over medium for 8 minutes.
  10. Turn, grill 7 minutes more for rare.
  11. Meanwhile, in saucepan, prepare hollandaise sauce mix according to package directions, adding tarragon to dry mix.
  12. Remove picks from meat slices.
  13. Serve hollandaise sauce with the meat.
